Recipe of the Month

Buffalo Chicken Dip
In hearing all the great feedback from last month’s “Recipe of the Month,” we decided to bring you another recipe! With the winter months coming to an end (wahoo!) we thought – why not tell you about one of our favorite comfort food recipes to get us through the colder months!

Here’s what you’ll need:
Cream Cheese 1 Block
Ranch Dressing 1 Cup
Hot Sauce 1/4 Cup (you can add more or less to taste)
Shredded Cheese 2 Cups (“Mexican Mix” or a Cheddar & Mozzarella mix)
Canned Chicken 2 Cans
Re-fried Beans 1 Can

Directions:
Pre-heat your oven to 350 degrees. Take a glass, oven safe pie plate and put in the block of cream cheese. I like to throw this in the microwave for 30 seconds or so to soften. Then I open and drain the liquid from the canned chicken and add it to the cream cheese in the pie plate. Next, I add in the cup of ranch dressing and 1/4 cup of hot sauce. (Pro-Tip* you can always add more hot sauce to one side if you want taste options!) Next, use 2 forks to pull apart the canned chicken and mix all ingredients in the pie plate. Once thoroughly mixed, use the forks to create a flat service for the next layer. Open your can of re-fried beans and add a layer, just thick enough not to see thru. Lastly, (some would argue most importantly) CHEESE! Take your 2 cups of mixed cheese and add a nice layer to the top of the dip. Make sure it is thick enough not to see thru. Place your dish in the oven for 20-25 minutes to cook. Try to let this cool off for a few minutes before you dig in and enjoy this hot dish!

Drive an expensive car? Repairs are likely costly, so be sure to carry full coverage. Own a home with a lot of custom features? Be sure your homeowners policy takes them into account. The way you live can help you save, too. For example, if you take public transportation to and from work even though you own a car, you may pay less for your insurance.
